100g red cabbage
1 small carrot
1 tbsp mixed seeds
2 slices of sourdough bread
Small handful of watercress or mixed baby salad leaves
75g cooked prawns
2 tbsp of cold pressed olive oil
1 tsp of fresh lemon juice
½/ dijon mustard
½ tsp manuka honey
1. To make the dressing, whisk together the olive oil, lemon juice, Dijon mustard and honey, is using, in a large bowl.
2. Add the red cabbage, carrot, and mixed seeds and toss together to make a slaw.
3. Put each slice of sourdough bread on a plate and top with the watercress or salad leaves.
4. Spoon some of the red cabbage slaw on top, then scatter with the prawns. Squeeze over a little lemon juice and season with pepper, and serve.
