Sesame salmon with broccoli and tomatoes

Ingredients:

2 tsp olive oil cold pressed
2 x 125g salmon fillets
6 spring onions
12 cherry tomatoes
Freshly ground pepper
200g long-stemmed broccoli
1 tbsp dark soy sauce
1 tsp sesame oil
½ tsp crushed dried chilli flakes
1 tsp sesame seeds

Method:

  1. Preheat oven to fan 180c/gas 6. Drizzle a tray with oil. Place the salmon fillets on the tray, skin side down, add the spring onions and tomatoes and season with pepper. Bake for 8 mins.
  2. Meanwhile steam the broccoli for 5 mins. Add the broccoli to the tray in the oven and drizzle the soy and sesame oil over the fish.
  3. Sprinkle everything with the chilli and sesame seeds and bake for 3-4 mins or until salmon is cooked through, then serve.
