This breakfast loaf is packed full of nutrients, and antioxidants to help support your immune system! Blueberries are a great source of antioxidants, and walnuts have been shown to increase good bacteria in the gut. Remember 70% of you gut bacteria is in your gut!  Manuka honey also contains antioxidant properties! Cinnamon is excellent for blood sugar balancing, and walnuts are a great source of omega 3!

Ingredients:

100g teff grain

120g spelt flour

2 tsp cinnamonIn

2 tsp cinnamon

1 tsp baking power

100g blueberries

3 eggs

1 carrot

half a courgette

40ml cold pressed olive oil

1 tsp vanilla extract

50g walnuts

tbsp of Manuka honey

 

Method:

  1. Preheat oven to 170C, and line a bread loaf tin with baking paper.
  2. In a large mixing bowl, combine all the dry ingredients (teff, spelt, baking powder, cinnamon and salt)
  3. In a separate bowl, whisk together the wet ingredients (olive oil, eggs, and vanilla extract with a beater before adding the fruit, vegetables and nuts. Fold in the dry mixture.
  4. Pour the mixture into the tin. Put in the oven for 50 minutes. Leave to cool, and enjoy with some greek yogurt on top or some nut butter!
