Ingredients:
2 tsp olive oil cold pressed
2 x 125g salmon fillets
6 spring onions
12 cherry tomatoes
Freshly ground pepper
200g long-stemmed broccoli
1 tbsp dark soy sauce
1 tsp sesame oil
½ tsp crushed dried chilli flakes
1 tsp sesame seeds
Method:
- Preheat oven to fan 180c/gas 6. Drizzle a tray with oil. Place the salmon fillets on the tray, skin side down, add the spring onions and tomatoes and season with pepper. Bake for 8 mins.
- Meanwhile steam the broccoli for 5 mins. Add the broccoli to the tray in the oven and drizzle the soy and sesame oil over the fish.
- Sprinkle everything with the chilli and sesame seeds and bake for 3-4 mins or until salmon is cooked through, then serve.
